An idea popped in my heard one day for an oatmeal raisin cookie, and as I started mixing some ingredients in turned into a little more than that. This is one of my favorite cookie recipes I've ever made, and I'm not exaggerating. They're egg free, naturally sweet, and made with organic, healthy ingredients. I hope you like them as much as I do!
1/4 cup oat flour*
1/4 cup of almond flour
3/4 cup raw dry organic oats
1/2 tsp baking powder
dash of vanilla
1/2 cup raw honey
1 tsp melted coconut butter
1. Prep a pan with parchment paper & set the oven to 350.
2. Stir together dry ingredients, then add wet ingredients. Fold in as many golden raisins as you'd like. (I went a little overboard with them because I'm a bit obsessed).
3. Grab a spoon and get a spoonful of batter per cookie. Drop each scoop on your cookie sheet.
4. Bake for 12-15 minutes, and enjoy!
*blend raw oats on high in a food processor to create a flour texture
